oyster mushroom which thrives on poplar and willow, but is equally
at home growing on birch, chestnut, beech or sycamore. With a great
meaty texture and pleasing seafood-like taste, it is especially
appealing to vegetarians and vegans. |

Shiitake The Shiitake (Lentinula edodes) (from

feature of many Asian cuisines including Vietnamese, Chinese,
Japanese, Korean and Thai. In the East, the shiitake mushroom has

Enoki mushrooms are also known as Enokitake, Golden or
Winter mushrooms. Japanese cultivators have developed growing
methods to produce this beige to white mushroom in bunches with long
thin stems and small button caps. The wild varieties are light brown
and bigger. Enoki have a very delicate flavour but a pleasant crisp
texture. Traditionally, Enoki is lightly cooked, served in soups or
stir-fried with vegetables, fish and chicken |

mushrooms have a strong taste
and look like a darker version of the button mushroom. They have
pink to dark brown gills |

Yellow / Pink Oyster Mushrooms, the yellow/Pink Oyster are very soft
in texture and they have a creamy flavor. They have a little less of
the mushroom flavor you get in the pearl and phoenix varieties with
a little more fruity/creaminess. The stems are thicker than the caps
and they require a little longer cooking, but they’re also very
good. No need to discard them! Because of the creamy texture and
flavor, the yellow oyster mushrooms is very good with risotto or
sauteed and served over gnocchi or ravioli. |

White Fungus: Snow fungus, also known as white tree ear fungus,silver fungus and silver ear is quite similar to wood ear but it is white in color and almost transparent.Good-quality snow fungus has a pale and yellowish-white color.It is often used in soups and desserts. |

Black Fungus Black fungus are also known as wood ear, cloud ear,
Judas ear or tree ear. Black fungus is found growing on elder trees
in China as well as in Britain. They either grow wild or are
cultivated and are gathered in summer and autumn. Black fungus has
been found to offer health benefits such as promoting blood
circulation by preventing clotting of blood in small blood vessels,
according to the Mycological Society of San Francisco. This in turn
has a protective effect against heart attack and stroke.
